Annatto is a food colorant used as condiment spice in the food industry. It is obtained from the pigmented, outer coat (pericarp) of achiote seeds.
Achiote plant is indigenous to the Central and tropical South America. The name achiote is derived from the indigenous Aztec dialect, Nahuatl.
Scientific name: Bixa orellana L, in the Bixceae family. Lipstick seeds, roucou, etc, are some of the other names of annatto.
